Pumpkin Candy

One Five Pound Fully Ripe Pumpkin
Five Cups Sugar
One Tablespoon Baking Soda
One Pinch Coriander

Remove the skin and seeds from the pumpkin. Cut into strips of 2 X 4 inches. Cover with water and baking soda. Let it stand all night. In the morning, remove pumpkin from the water. Rinse pumpkin and then boil pumpkin in fresh water until tender. Drain pumpkin. Boil sugar and one cup of water for ten minutes and add pumpkin. Cook slowly in a covered vessel until syrup is thick and clear and the pumpkin is brittle. Keep in a cool place.
